Default Irish Potatoes?

Anyone know of a good lc recipe for Irish Potatoes? I have seen them in the stores around here b/c of St. Patty's Day but I have resisted so far.

I found this Nice High Carb recipe:

2lbs. confectioner's sugar
8 oz. cream cheese
3 oz. coconut
1 teaspoon vanilla
1/4 lb. butter

Mix and squeeze ingredients together by hand. Refrigerate mixture for 1 hour. Roll into balls and roll balls in cinnamon. Makes about 3 dozen.

I could substitute unsweetened coconut for the regular kind. But how much Splenda should I use instead of the regular sugar?

Any help would be appreciated!!!

The "potatoes" would be fruit flavoured, but you could use a Jell-o flavour that compliments the cinnamon, like lemon.

I've made these with Splenda, and it worked pretty well. I don't remember how much I used, but it was more there for texture than sweetness as far as I remember. Between that and the coconut you just have to get them so they're not too sticky to roll. Keep in mind you're going to roll them in cinnamon (or cocoa) anyway, so a little stickiness is fine.
