Default To-die-for chicken rollups

Boneless, skinless chicken breasts
Cream cheese, softened
Fresh chives
Bacon


Trim any fat off the chicken and pound each breast to about 1/4- or 1/2-inch thickness. (I pound mine between two pieces of plastic wrap so I don't splash chicken bits across my counter). Spread each breast with an ounce or two of cream cheese — this will go a lot easier if you soften or melt the cream cheese in the microwave first. Sprinkle fresh chives over the cream cheese, the roll the chicken up from end to end. Wrap each roll in a slice or two of raw bacon. Place each roll, seam-side-down, in a casserole dish with sides, and bake at 350 until chicken is done (takes about 20-30 minutes I think). If you like, you can broil for a minute or two to crisp the bacon, but I skip this step.

The melting cream cheese and residual bacon fat make a sauce so delicious that I could just lick the dish to get every drop. Enjoy!

Sounds good! I bet you could also use some of the herbed spreadable cream cheeses too! Yum - I'll have to save this recipe and try it. Love the idea of wrapping the bacon around it - it would keep it nice and moist plus add flavor. My list of 'try it' recipes is really growing, thanks to all of the good people here!

Ohh that sounds good.I make a mexican style of this.

Mix olives and green chiles in with the cream cheese.Mix taco seasoning(make my own) with butter and dip rolled chicken in it.
When I was not on atkins,I would then roll in Dortios(sp?)Still trying to think of a replacement for the chips,though.

try removing skin from a sausage and wrap this with a slab of mozarella in a flattened chicken breast . Wrap the breast in 1 or 2 bacon slices and secure with a tooth pick . Broil for 30 min .

Sapph, if you're looking for a substitute for the Doritos, try barbecue pork skins. (Break them up on a baggie with a rolling pin so the pieces are smaller.) It will add that Doritos "crunch," won't taste "porky," and, best of all, adds no carbs. I think that might work very well!

Sounds good! Heres another way - there are so many ways to make these wraps.

pound the chicken breast so they are thin not too thin or they will tear.
Season your chicken night before so that flavour goes through roll
1 slice of ham
mustard
brea or swiss ( or any lower carb cheese )
splash of hot sauce

hold together with tooth picks
coat all sides with LC bread crumbs & bake ~ 350 for 30 - 35 minutes.

I LOVE this chicken recipe, so easy and so good - I make it almost every week. Add a little bit of powdered ranch dressing to the cream cheese - leftovers taste great too (if there are any )!!

We make a similar chicken recipe stuffed with a roasted poblano & pepperjack cheese, wrapped in bacon & grilled... ahhhhhh!

I'm going to have to try this one! It's getting rainy outside & this sounds like an awesome comfort dish! Thank you for sharing!

Hmmm .... DH won't eat any cheeses but I'll bet pate would work just as well -- sort of a "Chicken Wellington"!
