I wanted to ask someone who's more experienced than me, if it looks like a good recipe, as I don't bake too much yet, and 3 cups of Bake Mix would be expensive! Any opinions?

Pumpkin Spice Cake
his is an Atkins diet recipe. Pumpkin Spice Cake is delicious and this recipe has only 4.5 carbs per serving. It uses low carbohydrate food like Atkins Bake Mix to cut the carbs. If you like pumpkin pie you will like this cake. It makes a great low carb dessert and will keep you from getting bored with sugar-free pudding and jello. Serve it at Halloween (boo) or anytime.

Ingredients:
3 cups Atkins Bake Mix
1 tbsp pumpkin-pie spice
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 3/4 cups Splenda
2 sticks butter, softened
4 eggs
16 ounces solid-pack pumpkin
1/8 cup heavy cream
1/8 cup water
2 tsp vanilla extract
Prepare the Pumpkin Spice Cake:
1. Preheat oven to 350 degrees. Grease a 10 inch Bundt pan.
2. In a medium bowl, combine flour, pumpkin-pie spice, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, on low speed beat the Splenda with the butter until well blended. Incease speed to high, beat until creamy, about 2 minutes. Reduce speed to low again and add eggs, 1 at a time, beating well between each addition. Set aside.
4. In a small bowl, mix together the pumpkin, heavy cream, water, and vanilla. Set aside.
5. With the mixer at low speed alternately add the flour mixture and the pumpkin mixture to the butter mixture. Make sure to begin and end with the flour mixture. Continue to beat until the batter is smooth.
6. Pour the batter into the Bundt pan. Bake 55-60 minutes until a toothpick inserted into the center of the cake comes out almost clean. Cool in pan on a wire rack for 15 minutes, then remove from pan and cool the rest of the way on the wire rack.
This low carb recipe serves 20 with only 4.5 carbs per serving.
