Default Mock Charley's steakery ultimate gourmet fries

If you're missing those ultimate gourmet fries from charley's steakery, here is something that should satisfy that craving.

1 oz Pork Rinds (any flavor)

3 bacon slices or 1 1/2 tbsp bacon bits

1/4 cup Carb Options Double Cheddar sauce or cheese whiz

2 tbsp shredded cheddar or mexican blend

2 tbsp Carb Options or any brand of ranch dressing not over 1 carb per serving

Directions
1. If using raw bacon slices prepare bacon as directed, drain, let it cool, then break into pieces set aside. If using bacon bits skip this step.

2. Slighty warm pork rinds in a small microwaveable bowl for about 30-45 seconds.

3. In a another small microwaveable bowl, heat cheddar sauce as directed on jar.

4. Pour cheese sauce on pork rinds, add shredded cheese, then add bacon bits, heat in microwave for about 45 seconds to 1 minute or until shredded cheese is melted.

5. Add ranch dressing and serve.

Net carbs about 4-6 depending on ingredients used

I did not have any CO cheddar sauce at hand so I just used velveeta. It still came out pretty good when I tried it. Next time I will try this recipe again with the CO cheese sauce. I will also try it with chilli and cheese.

We don't eat pork. Do you have any suggestions about what substitute I can use in place of the pork rinds?

Carole, you might wanna try using fries made from turnips, radishes or zuchinni
Here are some recipies for each below:

(subtitute parmesan cheese for crushed Pork rinds)

If you do eat other types of meat, you can try subtituting turkey or beef bacon (beef bacon is recommended, since it tastes more like regular bacon, that is if you can find it). If you don't eat meat at all however, morningstar sells the veggie "bacon", which can usually be found at wal*mart supercenter or any other supermarket near you. I hope this helps, good luck.

No, I eat meat. We follow the biblical food laws, so we don't eat pork, shellfish, squirrel, rabbit, etc.
These sound like some great replacements!
