Cajun Sausage & Chicken Stew
Here's a simple, spicy cajun recipe. It's basically a simple jambalaya, but you stop short of the rice. There are still some carbs in it though, so stay away if you're on Induction.
1/4 cup olive oil
2 tsp cayanne pepper
2 tsp salt
1 large yellow onion, chopped
1 large green pepper, chopped
1 lb. andouille or other smoked cajun sausage, sliced
1-1/2 lbs. chicken, diced in 1" cubes
1 can diced tomatoes
1/2 cup green onion, diced
--Season chicken with 1 tsp cayanne and 1 tsp salt; let stand
--Heat the oil over medium heat in a large dutch oven
--Add yellow onion, green pepper, 1 tsp cayanne, 1 tsp salt
--cook 15-20 minutes, stirring frequently until onion and peppers are carmelized
-- add sausage and chicken; cook for 10 minutes until chicken is lightly browned, stirring frequently
-- add tomatoes (including juice) and green onion
-- cover and simmer 10-20 minutes or until you can't wait any longer
