Default Seaweed Noodles

There is a new product I saw on the Food network, Kombu Seaweed Noodles (kombu-noodle.com). They showed restaurants in New York that are serving them. They looked good so I thought I'd give them a try. Unfortunately, they're not in many stores yet.. so I tracked down a distributor and had them shipped (6 pack minimum/ $2.50 a pack).

They have to stay frozen and come in individual packs (it's a large serving .. 3 carbs and a total of 12 calories) about the size of a pkg of Ramen. The box they were delivered in smelled fishy... bet hey, they're made from seaweed afterall.

I tried a pack today with leftover curry chicken. I drained the noodles and rinsed them in cold water then briefly stir fried (they didn't need cooking - - only warming) briefly with garlic and butter.

The noodles were pretty good and had a chewy texture (like spaghetti al dente). The portion was too big for me. A couple of times, I got a whiff of fishy smell (ick) but overall, they were good.

Next time I plan to include them in seafood pasta. My husband also recommended soaking the noodles in milk to remove the fishy smell. I'll let you know how it tastes.

Very interesting...thanks for passing the information along.

I once - and only once - found seaweed noodles in my local Japanese grocery store. They were refrigerated instead of frozen and rather crunchy. The seaweed they were made of was not identified. They made an excellent Japanese salad.

Another Japanese noodle that is fairly easy to work with is made from konnyaku. It contains virtually no calories or carbohydrates. They come packed in water and you blanch them first. Great in oriental dishes. I've never tried them with anything western. My large Chinese food store carries them as well as the Japanese grocery. There are two types - natural which are clear and soy which are white.

Post All Seaweed Created Equal??

Just a note of interest....Be careful with seaweed products...it is not all created alike. I thought that sushi nori (the stuff you make sushi with) would be a great snack...it's seaweed right...green stuff from the sea. Well, I started looking up nutritional values and was SHOCKED at how much carbs it CAN contain. One sheet of sushi nori was 50% carbs and 3grams carbs. You get lots of vital nutrients from seaweed, but I will stick with a salad myself.

Just check the label before buying. Good Luck!
