I almost had chicken salad with garlic mayo, fresh chopped chives and chopped celery but my dog snatched my chicken before I got a chance to prepare it. So I not so nicely banished him to the back yard and wasn't in the mood for anything else so I just grabbed a few pieces of coconut bark out of the freezer to keep me going until supper.

todays lunch was three slices of black forest ham spread with herb & garlic cream cheese and rolled up, radishes, raw broccoli, sliced cucumber and a small tomato dipped in ranch dressing.

Roasted turkey slices and string cheese.
.....with an icecream float- diet wild cherry pepsi and sugar free coconut milk icecream (vanilla)- yum!!!!!!!!!!!!!!!!!!!!

last night I made crockpot buffalo chicken, so I'm having that in lettuce wraps for lunch. I would sprinkle it with blue cheese, but I need to lay off the cheese for a few days and see if that breaks my stall.

I put chicken tenderloins in the crockpot, covered them with franks red hot sauce, added a bit of water and cooked on low for 7 hours then on high for 1 hour. The last 10 minutes I tossed in a stick of butter to finish. When it was done I used a fork to shred the chicken. Perrrrfect.

today for lunch I got creative (no...I didn't) I had two string cheese sticks wrapped with turkey lunch meat. Meh. Was in a hurry and not really all that hungry.

i grilled two boneless pork chops last night in the kamado. ate one last night and saved one for today's lunch. pretty good but i think i over seasoned the meat. with the atkins way of eating i have been doing a lot of cooking (you just about have to). i bought a cooking thermometer and it make a huge difference as you know exactly when the meat is cooked to your liking (medium) by it's internal temperature. no more over or under cooked foods.

grilled chicken leftover from last night. then a buddy of mine brought me a bit of pork he had slow cooked for 11 hours at 225 degrees. talk about tender.
