Yesterday, we had baked chicken leg quarters with brocolli and cheese. Simple, inexpensive and taste great.

Husband was out of town and the kids wanted fajitas, so I picked up Chili's. Steak fajitas, cheese, pico de gallo, sour cream, and guacamole all piled up on a plate - I skipped the tortillas and didn't even miss them!

Last night a friend and I went to Chili's. I ordered the Big Mouth Triple Cheese Bacon Burger. I removed the bun and asked for the fries to be subbed with grilled mushrooms, onions and green bell peppers. I poured the queso sauce all over the burger. It was really good! I didn't feel deprived at all.

We use the La Tortilla brand LC tortillas. We use one (3 carbs) and then load it up with chicken mix (seasoning, onions, green peppers) cheese and then topped with salsa and sour cream. We eat the mixture then the tortilla with all the flavors soaked in it.

Busy night today with work so I went to Golden Corral for take out. A piece of streak, piece of rotisserie chicken, brussel sprouts, and green beans. I got all that for $6.19.

Boneless skinless chicken breast (left over in freezer from low fat days) sounds boring right...

Fried cabbage...

The rest makes the chicken a lil' more appealing...

enchilada chicken...

take chicken and top with cumin/chili powder and garlic powder then enchilada sauce... top that with green onion and black olives and cheese then sour cream...YUM ( you can top with really anything you want.. i dont remember where i got the original recipe.. but ive changed it so much its not really anything like that anyway..

Simple but tasty - roast chicken with roasted garlic, along with a side salad made with english cucumber, halved grape tomatoes - all topped off with homemade creamy balsamic dressing.

Whole Roasting Chicken - 5'ish pounds - rinse and pat dry. Put one or two whole bulbs of fresh garlic in the cavity (just remove the outer, paper-y layer on the garlic). Coat outside of chicken with olive oil, sprinkle on some seasoning salt or your favourite spices, and roast in a 350F oven for two to two and a half hours. Delish. The fresh garlic roasts inside the bird and gives a nice mild 'roasted garlic' flavour to the chicken.

Chop up some english cucumber, and rinse and halve some grape tomatoes. This is the 'salad'. Mix up some 'creamy balsamic dressing' - found from this fantastic recipe - with the one exception being that I *skip* the artificial sweetener. The dressing actually tastes better without any sweetener at all:

Drizzle the 'creamy balsamic' dressing atop the cucumber and tomato and even on the garlic roasted chicken - really good

That dressing is very good - and not just for cucumber salad, as per the recipe - good on all kindsa stuff. Gluten and dairy-free too
