I have an "invented" casserole in the oven. Eggplant layers, with riccotta cheese, cranberrys, walnuts, spinach and roasted red pepper alfredo cheese. I plan to top it with some feta cheese and brown. A steak will accompany for my husband and some red wine for me. I have a good feeling that it will be yummy.

Tonight is going to be a nice hamburger vegetable soup done in the slow cooker, and a piece of low(er) carb cornbread with butter, and some chai tea.

My dinner was about 6 slices of bacon, some cheese and greens and onions sauteed in the bacon grease. I know it isn't the most balanced, but I had a grilled chicken salad for lunch. Thirst, will be knocking soon!
