OMG I still haven't made this dressing and it sounds so good but I did just have 4 perfectly crispy pieces of bacon since I only had 2 burger patties on the road for dinner tonight.

Bacon and chopped soft-boiled eggs mixed into guacamole.

It doesn't look great, but the taste is very good!

La Costeņa is what's available at my grocery stores here in Canada. Plugging it into google, other brands are La Victoria, Goya, and Embasa. Should be with other Mexican foods. It's in a little can about the size of Vienna sausage cans... that's what it reminds me of.

Chipotle mayo can also be made with mayo + chipotle Tabasco sauce - that's how we do it at work and it's fantastic. Giving away company secrets here.

That's the brand we have here in Texas too, although
I've never tried it, I should! Mix it with mayo sounds

I just saw a cute idea for a spin on bacon wrapped scallops.

The scallop was sliced in half to make two symmetrical circles. Then a square of bacon was placed in between two halves to make a tiny "sandwich."

Robin, I like that idea - I recently saw something for bacon wrapped scallops....
For Xmas breakfast I am making Hangtown Fry (has bacon in the recipe). I lived in El Dorado County for many years and never made it...

I made Jalapeno Poppers today and they are so good.
I definitely recommend them.



They're so easy to make
One pkg. cream cheese
6 Jalapenos cut in half and cleaned out of seeds
12 slices bacon
Stuff each half of Jalapeno with cream cheese, wrap with slice of bacon and bake in oven

I've been away from VLC for a long time for extended medical reasons, but I have just returned to it, and thought I'd visit the kitchen forum and found this thread.

I discovered something by accident a couple of months ago. It went like this:

Me: I have pre-cooked bacon strips in the fridge my helper made and left me. But they're cold.

Voice in my head: Dip them in something. Guac!
Me: (no guac)
Voice in my head: Blue cheese dressing!
Me: (no bc dressing)
Voice in my head: Uh. Mustard?
Me: Not unless you also have meat and tomatoes and mayo.
Voice in my head: Hey look! A jar of natural peanut butter!
Me: Ewww! That sounds vile with bacon!
Voice in my head: Bacon is the great equalizer.
Me: Maybe I should just have a few spoons of peanut butter. This is pitiful.
Voice in my head: Why don't you just try some peanut butter on your mini bacon strip?
Me: I am blaming you for this.

...

I ate ALL of it. It's a weird thing but the bacon and the peanut butter together, it brings a sweetness out in the bacon. It is seriously awesome! I had my kid (millennial) try it and she thought it was awesome too.

I don't think that counts as a recipe, I know. :-)

Tomorrow I hope to make a spicy red thai chicken curry but since it takes all day to low cook in the crockpot, maybe I can talk my helper into getting me some bacon so I can have some chicken - bacon - avocado - bluecheese salad. I could pretty much live on those salads (and once half did, while losing tons of weight on VLC actually).

PJ, nice to see you back - I've seen you around the forum. That salad sounds so good. I do a lot of protein salads because it's hot here most of the time...salad like this hits the spot!

Meme - YUM - thanks for sharing the popper recipe.

I don't have a contribution, just making oven bacon to sprinkle on my dinner salad, whatever it ends up being.

Jalapeno Poppers...I made a double batch so I had more

I put them in my big cast iron skillet and baked them in the oven.

I bought a batch of these all ready made from a store called HEB last weekend and they were so good.
