Question How to stock a LC Kitchen?

Hi Karen,

My apologies if this isn't the correct place to post my question, but I'm hoping for help!

What would you consider to be the "staples" that every LC kitchen should have? I'm returning to the LC lifestyle, and trying to plan a bit of a shopping to fill in the gaps and allow me to prepare a recipe off the forums with out needing to shopping every time for a specialty ingredient

I'm looking for tips as to LC special items (i.e. soy protein isolate? soy flour, bake mixes? syrups, sweetners, thickeners? specialty cheeses, recommended spices? which of the many many vinegars would I be best to purchase?)

I do have the basics, (meat, cheese, butter & eggs) as well as all the common spices, which has been fine for Induction. It just seems that I'm missing "something" from every recipe that I start drooling over!

I am planning to go to the Low Carb Wellness Centre in North Van this week, and I will be in Toronto all next week, so I'm hoping to pick up some items that I'm not finding at my regular grocery store.

Any help greatly, greatly appreciated!

Hi Wynter,

You've picked the right and the wrong person to ask. Because I spend a lot of my time developing recipes, I use only the "raw" ingredients of LC cooking. So, no mixes, syrups and stuff like that. I use fresh herbs and have spices for baking and cooking Indian food.

All of this stuff I've bough here at Capers, Choices and the Gourmet Warehouse. I would start off with small quantites. If you find yourself having to buy it frequently then buy bigger.

Off the top of my head, here's what I always have around...
  • Plain soy protein isolate
  • Plain whey protein isolate
  • Vital wheat gluten
  • Oat flour
  • Flax seeds and flax meal - dark and golden
  • Albumen
  • Ground almonds
  • Sliced almonds
  • Coconut
  • Macadamia Nuts
  • Pumpkin seeds
  • Sesame seeds
  • Hazelnuts
  • Good Quality Unsweetened Chocolate
  • Cocoa powder
  • Cocoa butter
  • TVP
  • Soy flakes
  • Soy milk in tetra packs
  • Xanthan gum
  • Gelatin
  • Nut butters – almond (raw and roasted), macadamia, tahini, pumpkin, peanut, hazelnut
  • Good quality extracts – vanilla, maple, strawberry, cherry, raspberry, lemon, lime, orange, grapefruit, banana, rum
  • Stevia Chicolin combo
  • Liquid stevia
  • Sugar Twin – brown, white and liquid
  • Splenda
  • Frozen Berries
  • Cold pressed oils – olive, sesame, sunflower
  • Coconut oil
  • Red wine, white wine and balsamic vinegars
  • Soy sauce, fish sauce, Chinese black vinegar, sake, dry sherry
  • Cinnamon, ginger, allspice, nutmeg, cloves
  • Coriander seeds, cumin seeds, turmeric, bay leaves, cinnamon sticks
  • In the freezer - kaffir lime leaves, galingale, curry leaves

This was exactly what I was looking for! I have it printed out and am ready for my shopping expedition.

I have to admit I haven't had a lot of luck finding items at Choices - but I may not have been looking for the right things

Could I ask where the Gourmet Warehouse is located? I can't seem to access what I think is their web site...

I know what you mean about Choices. I find that Capers has more variety and the merchandising is better.
