Default Sugar free almond paste

Does anyone know if it's possible to make sugar free almond paste?

It's definitely possible, but you will need a sugar sub that provides the texture of sugar. Can you obtain sugar alcohols where you are? Can you tolerate them? Maltitol would be the easiest to work with but isomalt would be pretty easy as well. Sorbitol, I think, would also fit the bill.

Polydextrose (polyd) would work wonderfully, but from what I've heard it's practically nonexistent in Europe. Inulin works the same way, but might be more available in your area. Can you obtain inulin? I think in Europe they have different names for it. Fructofibres, perhaps?

Once you have the right sugar subs, it's just a matter of making a very thick syrup, processing some blanched almonds into a paste and then combining the two.

Hi,

I was afraid I would need something like that. I will look into it. There is a sweetner with frutofibers here, but I am not sure exactly what it is. I'll tell you it get frustatrating looking for new-fangled things in Sweden. lol

Hmmmmm... I think you might be refering to the sweetener called 'hermesatas w/ fructofibres.' It does contain some inulin, but it's mostly carby maltodextrin. I don't think it would work for your purpose. Pure inulin might be harder to find. You might want to look in pharmacies in the fiber supplements area. Inulin is a very popular fiber supplement.

There's online stores in the UK that have these ingredients, but shipping from the UK is pretty steep.

Is shipping expensive from Germany? I think Germany would probably be your best bet for mail order sugar alcohols, polyd or inulin.

You're right one, Hermesatas. I don't use it much. I go for Splenda or stevia usually.

I'm not sure what the shipping is from Germany. I will see what I can find. I am hopeless with the German langauge.
