what is your favorite way to serve them ????

For phase one this how I ate chix breast most of the time. I like spicy foods but you could change to fit your tastes.

Spice the chix with, hot pepper, garlic, onion powder then grill. Chop in to bite size. Make a nice salad with mix greens and tomato, onion, and veggies you like I used a little grated cheese(1/4 c) too. Throw the chix on top of the salad and enjoy. Squeeze lemon juice on top. I don't use salt because of high bp. And I didn't use much salad dressing during phase one.

Keep in mind spices really help dress up meals.
Try not to use pre made spices in those pks as they have a lot of salt.

I have a couple of favorites that I make a few times a week and are ready in 10 minutes or less because I keep already baked cutlets in the fridge. The first is a pseudo-chicken cutlet parmesan: I just put a few tablespoons of homemade tomato sauce on the chicken, some grated parmasan, a little part skim mozzarella, and nuke it. For the second dish, I make a paste with roughly 1 tablespoon of low fat mayo, 2 tablespoons of grated parmasan, some onion powder, and a little pepper. Spread it on the cutlet and broil it until golden brown. Sometimes I nuke it if I'm in a hurry. And sometimes I add other toppings like sauteed onions, mushrooms, tomato, etc. It's really tasty.

I love baked Salsa Chicken. You basically take some chicken breast's, season them with some Taco Syle Seasoning, top them with about 1/4 cup of Salsa and bake in an oven at 375 Fahrenheit until almost done, top with some shredded cheese and bake for about another 5-10 minues until chicken is done all the way. I usually server this with Broccoli and Onions (both sauted) or in Phase 2 I serve it with Rice and Beans (brown rice and some kidney beans).

Does any one cook them on a George Forman Grill? I just relaced my imposter grill (I wore it out ) with the real one and I never had any luck with chicken breasts- they always came out like shoe leather. I think I'm over cooking them so if ayone else cooks them this way how do you do it?

i am going to be good and am starting over on phasse one again

i have a fake george grill but havent used it in a longggg time..so i am not any help..

I cook my chicken/turkey breast cutlets on my Hamilton Beach Grill and do it weekly. I make about 2 lbs of breasts per week.

I cook them for 7 minutes and they always come out great!! I also cut them into approx 1 oz pieces prior to cooking when I'm marinating them.

I use the HB grill too, but I am now fond of the taste of dried out chicken breast... lol... I was cooking them for 10 mins!
Will try 7.

chicken teriyaki
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup splenda
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
In a small saucepan over low heat, combine the cornstarch, cold water, splenda, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
Preheat oven to 425 degrees F (220 degrees C).
Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
Bake in the preheated oven for 20 minutes. Turn pieces over, and bake for another 10-15 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.
