I just made this recipe from Karen's book. Wow! It was great. I had left overs today with spinach and some of that sauce poured on the spinach. I was sad when my plate was empty. Ok, I even confess I licked my plate. I live alone, I can get away with it!

Unfortunately, "The Low-Carb Gourmet" by Karen Barnaby is currently out of print . However, I see you're in BC .. I'd be willing to bet your local library has a copy you could borrow. This recipe is on page 216
Nancy, I like my plate all the time! I even lick my husband's if he leaves juicy goodness on it....... I can't believe what he leaves behind sometimes! LOL
