1/4 cup Atkins Bake Mix
1/4 cup dry curd cottage cheese
1/8 cup whipping cream
2 large eggs
Mix together ingredients. I ended up letting mine sit for a while since I was contemplating what to do with it - usually I would have just cooked up the whole thing like an omelette/frittata, but it looked like a lot this morning, and I wasn't sure I was hungry enough to eat it all.
Divide between 12 mini muffin tins (they will be full).
Bake in oven (I used toaster oven for 15 minutes at 400F). Could be microwaved or baked in regular oven, too.

As I was eating them, I was contemplating - Some nice sugar-free syrup would be pleasant; Added cinnamon or nutmeg for a sweet muffin; or herbs for a savory would be great.
I could go on an on, but you can use your imagination to derive the taste that is best for you.
