Talking Almond Crust Quick Cheesecake

Hi

I've been lurking for a while and finally decided to post something. First I have to say though, that this is a terrific board!! I am so impressed with the kindness of the members. Also, the vast amount of info and variety of topics is so exciting. I have been doing Atkins since Jan 2,03. So as a newbie, this board is heaven! Now for the recipe which I made tonight.


Almond Crust Quick Cheesecake

2 8oz blocks of cream cheese, softened
2 eggs, beaten
1/2 tsp vanilla
1/2 cup splenda
scant 1/4 cup almonds to be crushed
Pre heat oven to 350

Butter a 9inch pie pan. Coat w/ nuts. Blend pie ingrdients until smooth. Bake till firm and lightly golden brown. 25-40 min depending on your oven. Test for doneness by inserting knife which will be clean when done.Cut into six pieces at 3 carbs each. I didn't count the almonds.

I've printed the recipe out. My family loves cheesecake. Might make it for a Valentine's treat.
