That's what I had thought, but I wanted to be sure. I had read that it was made from glycerides which turn into sugar. I got some coconut oil from Tropical place and am looking forward to incorporating it. Have dry skin and read that it helps your skin hold water better.

Maybe you are confusing with medium chain triglycerides, which coconut oil is full of. These triglycerides (fats) are composed of (as their name implies) saturated fatty acids of medium length, which means that they go to the liver like carbs and amino acids to be metabolized.
Long chain saturated fatty acids (i.e. animal fats) bypass the liver and go straight to the blood via the lymphatic system.

Thanks for clearing that up. I bought some Coconut oil and just wanted to make sure I was on the up and up.

Instead of almond flour for deep frying, try making a "breading" out of finely crushed pork rinds. Whip them up in a food processor until they're dust. Coat a pork shop or chicken legg in egg then in pork rinds and fry. Whooooooowweeeeeeeee! Make sure you spice up the pork rinds with paprika, cayanne, thyme, oregano, or whatever. MmmmMmmmmMmmmm!
