Here's another. I made these Parmesan Dijon veggies. The type of veggies is really left up to what you have available. I just used up what I had in the fridge. I served it with pot roast.

I made these pork carnitas. OMG....they are wonderful!!! Very flavorful and spicy. You can adjust the heat to your own taste. I had some salsa verde on the side. Found a can at WalMart that is LC. Really hits the spot when you want mexican food!!!

The recipe does call for you to simmer until the liquids are gone and then brown the meat. I simmered mine for over 2 hours and the liquids were just reduced to about half. So I spooned off the liquid and then let them brown.

Not the best pictures but... We have a favorite meal we used to eat a lot before we started low carbing. In fact it's called 'favorite' in our house. It was hamburger with cream of mushroom soup poured over rice. Regular canned soup has so many carbs as does rice so we haven't had it in awhile. Tonight I made low carb mushroom soup and put it over hamburger and chopped up steamed cauliflower. So delish! I almost like it better, rice feels so heavy in your stomach!!

I used 1 bag cauliflower (had five 3/4 cup servings but we ate it in 3), and 1 lb hamburger.

On the soup, I changed the servings to 3 and made it that way. It didn't quite thicken as much as I wanted. As per instructions, I blended it, put it back on the burner to boil for 10 mins thinking the cream would thicken but not too much. Maybe put in half the water... Still delicious.

Tonight I tried making lo carb tortillas. They're so outrageous in the store! I watched this cute 1 minute video.

I stuck to the recipe the first time except adding a smidge of stevia (I cooked the full 90 secs.)

2nd time around I did half flax seed milled and half soy flour. Hubby preferred the all flax one. This soy one was slightly more eggy feeling. I plan to try again and then maybe bake them after cooking, to see if I can make crackers? Or chips? We'll see.

We used them for BLTs of course.

That lasagna looks sooooo good! Would you mind running a piece over to me? I am definitely going to have to try that. I am thinking I need to buy a spaghetti squash soon. I miss having Italian food!
