Default Becaboos Favorite Nuts

Spiced Holiday Nuts

Makes 2 Cups

Ingredients:
  • 2 Tablespoons of olive oil
  • 1 Cup of almonds
  • 1 Cup of pecans
  • Kosher salt
Spice Mix:
  • ¼ Teaspoon of ginger powder
  • ¼ Teaspoon of cinnamon
  • ½ Teaspoon of ground cumin
  • ½ Teaspoon of chili powder
  • ½ Teaspoon of curry powder
  • ½ Teaspoon of garlic powder
  • ¼ Teaspoon of cayenne pepper
Directions:
  1. Heat oven to 325º.
  2. Add all the spices in a small bowl, blend well and set aside.
  3. Heat 2 tablespoons of olive oil in a non-stick sautè pan over medium. Add the spice mixture, sautè while stirring over low heat for about 3 to 4 minutes forming a loose paste.
  4. Put the almonds and pecans in a bowl, add the spice paste and stir to cover the nuts completely.
  5. Spread the nuts out on a cookie sheet and bake for 15 to 20 minutes, stirring once or twice.
  6. Liberally sprinkle with the kosher salt to taste and let cool.
Cook's Notes

There is not a whole lot of side notes or comments to add to this recipe. I am not even really sure I remember where I got it from but it has become a family and friends classic. Every year just before Christmas, I get at least 5 calls from people asking me if I still have this recipe. (Cause they loose it every year). This was always one of Becaboos favorites and she asked me to post it. These are great to put in a tin and give as a gift (like in the picture above) or just to have sitting around the house to have something really good to nibble on.
