I would certainly avoid coconut products in your situation. I've been LC for 11 years and have never felt the *need* for coconut products. There is almond flour if you feel the *need* for a flour-like substance (I don't). As far as coconut oil, you can substitute butter, lard, tallow, bacon grease or olive oil.

I stick to bacon + eggs at breakfast, a salad with chicken at lunch and a meat or fish (grilled or pan fried in butter and/or olive oil)+ 1 or 2 veggies at night. What sorts of recipes with coconut oil are your trying to avoid?
