Cool Gluten free processed meats

Does anyone know about Sausages etc. I have spoken to several butchers and they say anything from "All sausages contain fillers" to "in December 02 a law was passed to say they cannot contain fillers"
I had my g/f do some research and she came up with:

They must be Gluten Free which means – no wheat, corn, barley, or proteins found within grains.
Foods Labelled as this contain no detectable gluten, which means less than 20mg/100g of food of gluten
-Food Standard Australia/New Zealand

On Labels
Carbohydrates by Difference means, water, protein, fat, dietary fibre, ash and alcohol
Carbohydrates Available means, sugars and starch, oligo saccharids, glycogen and maltodexrins.

But we think only the products advertised as gluten free are 0 Carbs (as stated in the law on 20th dec. 2002)
Where as non disclosed items can and most likely do contain fillers.

"Composition of sausages must be no less than 500g/kg of fat free meat"

My local butcher has all sausages advertised as Gluten free, as well as the Chevapachichi's and Steakettes ...yum

If any1 can elaborate on the above please do.
