About the bacon wrapped chicken, I would over lapped the bacon next time because it does shrink and leave gaps.
I can't remember if I posted again that the cold leftovers
were really good the next day.
I think your idea of the chicken skewers with colored peppers would be wonderful, because it doesn't take as long to cook like a whole chicken and the bacon might be a little more moist. But, the whole chic is less prep., about 5 min. if that..lol
I do love red peppers and use them all of the time in everything. They are so sweet and good.... Red onion is also good on the skewers with the peppers.
