It definetely is a hard path to follow and to keep that motivation daily can be a challenge. I have played around with my menus for years figuring out the kinds of things I can eat without having them raise my blood sugar. For me, the key is to have variety so that I don't get to the point where I'm bored with what I'm eating. Slowly, over the years, this WOE is just becoming habit for me. NO, I'm still not perfect and do have the occassional slip, but I know without a doubt that I have to get right back on it and not allow myself that foray into carbdom!
