Okay, here's a new one I've been working on:

Carrot Mug Cake

mix together dry ingredients:
2 tab. coconut flour (I use Bob's Red Mill)
2 tab. almond meal
1/2 tsp. baking powder
1/4 tsp. cinnamon
1/16 tsp each ginger and cloves
dash salt

Melt in bowl:
2 tab. butter
Add:
1 egg
2 oz carrot baby food (1/2 jar--yeah, I know, get over it, it works!)
1/2 tsp. molasses (or omit and use more sweetener)
1/8 tsp. stevia or blend (sweeten to taste, I don't like super sweet anymore)
chopped pecans

Mix well and mash any lumps until smooth.

Divide into two mugs and microwave for 1 min 20 seconds. Cool and top with whipped cream.

I get a carb count of 6 grams each serving, this is subtracting fiber from nuts, flours and carrot. I also made this using a prune/apple baby food blend and it was good but higher carb, next up is to try it with pumpkin.

ETA--I cannot find lupin flour anywhere, only online!
