I always put on more water weight after I eat gluten foods and it takes about 2 days for my weight to hit its max and 2-3 days to go back down. When I eat sugar my weight reaches max the next day and takes about 2 days to come off. My dr suggested gluten foods cause more water retention because they are more inflammatory.
