Pretty simple and may be common fare for a lot of people but I made my first roast ever.

About a 6 pound beef roast with nice marbeling. Browned on both sides in hot sesame oil. Put it in an iron skillet with three large sliced jalapenos, one large onion, a little fresh garlic, a bag of baby carrots. Spiced with salt, coarse ground black pepper and cumin. Cooked it for about 6 hours and then froze 5 ounce servings in ziplock bags. Just had one for lunch
