Actually, Vitamin C is also water soluble.

I don't really understand this also, but if you read the article by Stefannson, they used a "meat cure" for those stricken by scurvey! I guess it's the organ meats, or maybe the marrow? don't know...of course too, the industrial meats we eat today are not as good as the meats our ancestors ate!

I do know that when money gets tight I often don't eat "enough veggies" as I buy meat in bulk and always have at least something on hand. It's never been a problem for me. Last month I went almost 2 weeks with no veggies (or fruit) at all and no problems. (also I don't take fiber, I get it only from the foods I eat, but I do take other supplements, but not Vit C, except what comes in my multi vit)
