Yesterday's salad: at work, pretty much like the first one I posted. Baby spinach, tomatoes, a bit of purple onion, lots of crumbled bacon, bistro sauce as the dressing. On the side: a boiled egg, a few pickles, 1 oz cheddar cheese. Really filling lunch.

Dottie, I can relate to not wanting to repeat the same dishes... and why I don't like buying a giant bunch of greens when my DH doesn't care for them. I try to get veggies that I can mix up, and both of us will eat and it won't get tossed into the compost. Cole slaw mix is one of my favorites for that. I could do actual cole slaw one day, sautee it with some onions and bacon the next day, and do Chinese style after that - sauteed with onions, sesame oil, and soy sauce. And the other thing I like about the cole slaw mix is that it usually lasts in the fridge for at least a week or two.
