I made deep fried coconut shrimp and they were great. I was very surprised to see how LC unsweetened coconut is - (lots of fibre) - i.e. 10 grams net carbs for the entire bag....I used maybe 2 grams carbs worth.
I dipped fresh shrimp in an egg mixed with cream and dipped in the coconut. They were heaven and less than 1 gram of carbs per serving.
Next time I will come up with an interesting LC dip. Any suggestions??
