I might be late here, because it sounds like you already hit the course, but I ran into this very issue yesterday. I'm flying out tomorrow morning and wanted some on plan food for the trip. I bought macadamia nuts, mixed nuts, mini beef sticks, and, after researching the non-refrigeration implication a bit, some Babybel cheese.

Also, there is something at kroger called Moon Cheese and it come in 3 flavors. Unfortunately, it's not yet available at our local Wal Mart.
