Some critics say Atkins is all meat. Well, I am proof that's not the case. I eat more veggies following this lifestyle than I ever have. DH and I have been trying new veggies since summer, and I try and follow what is in season.

Our go to's:
Radish, bell peppers, celery, baby carrots, broc and caul for his lunches
Romaine or spinach salads for my lunches
Batches of mock tater salad (cauliflower) for snacks
As other folks mentioned on prior pages, I discovered roasting veggies such as turnips, beets, rutabaga, etc.
Sliced and fried radish, zucchini, etc for "French fries"
I sometimes eat 1/2 cans of green beans, or sliced cucumbers as a snack here at the office.

And this summer, we discovered baby bok choy and grilled avocado. Delish!
