I've only eaten delicata that once and it seemed pretty sweet to me. But squash are so irregular, I may have gotten an especially sweet specimen. On the other hand, I seem to be very sensitive to the carbs in veggies. Even turnips + onions, both induction level veggies, will sometimes send my blood sugar >140 if I have more than an ounce or two.
