Desiccated coconut.
I make these differently now. I have a generic almond meal based muffin/cake that I make and I use that recipe as the base for the coconut tart and then add the jam and coconut topping as per the one in this thread. Also I use way less sweetener these days because my taste buds don’t need as much sweet.
