We make a LC pudding---1 soft tofu, 2T cocoa, 2 c whipping cream,1 box sugar free chocolate pudding mix. ANd a little coffee crystals, 1t vanilla and a liquid like almond milk, or water , or liquid from the tofu, to be the consistency we like.

NOT calorie free, and not carb free, but an elegant pudding and tasted pretty good as my kids dive in and hog it.
