My recipe:

20g salted butter
40g onion, chopped tiny
160g mushrooms
50g cheddar
2 or 3 large free-range eggs
celery salt
white pepper
80g celery sticks as accompaniment
10g onion extra, finely chopped, to sprinkle raw at the end if you like that

1. fry the finely chopped onion in the butter until it starts to go transaparent

2. slice the mushrooms, add them to the pan, stir frequently - first all your butter will coat them and the pan will be dryish, eventually they'll start to give off juices - while you're doing this grate or chop the cheese, and break & whisk your eggs

3. once the mushrooms are looking nicely done but not wizened, add the beaten egg

4. once the egg is nearly done, add the cheese, celery salt, and pepper to taste

Serve with celery stalks - it's a very smoky, rich recipe, the stalks add a refreshing crunchy edge - and sprinkle a tiny bit more raw onion if you like that flavour.

Probably not to everyone's taste but I love it!
