Karen, I've also been really impressed with Low Carb Gourmet...in fact, it's sitting next to my computer right now because your cheese/noodle recipe was an inspiration for a crepe variation (sometimes, a 'new' recipe is just a happy collision of a couple of other recipes in my head.) Anyway, I've had a lot of fun with the recipes on the days I am up to eating and cooking, and on the days when I'm not, it's my favorite thing about a good cookbook...a wonderful read.
