This recipe reminds me of alfredo sauce, and I use it heated on spiralized zuchini noodles, chilled on salad greens, or just plain as a chilled raw soup.

I think you could use macadamias instead of the cashews.

There's something about the nutmeg and/or thyme (or the combination) that makes it very special. It takes a fairly hefty blender to make it. I got it from Carmella at the Raw Freedom Community forum.

Creamy Spinach Sauce
4 cups spinach
1 small garlic clove
1/2 cup cashews
1/4 cup water
1 tbs lemon juice
1 tbs olive oil
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp thyme

Blend in high speed blender until very smooth.
