I would like to add another variation to the muffin-
unsweetened pumpkin puree-I used about 1.5-2 TB per coffee cup muffin. the texture becomes softer, but is so tasty. I also don't use the cream cheese, but I am sure it is equally or more tasty with it. The recipe seems very forgiving as far as measurments and what you add or take away-as long as you have the basics-flax, egg, baking powder.
also golden flax is much tastier than dark, IMO
