Next time I make chicken stock, I have this idea I want to try. You see, I keep looking for ways to use the lean, tough, stringy meat leftover from stewers after making stock. I've all but given up, but it just occurred to me that I could make mayonnaise with chicken fat! It might just be the perfect thing for chicken salad.
