Here it is! I don't remember where I got the original recipe, but I fiddled with it because I wanted to be able to use a whole envelope of gelatin instead of measuring out 1/2 of it. This is great with berries or rhubarb (which is just now poking out of the ground - I can't wait!).

Panna Cotta – low carb
makes 5 1/2-cup servings

1/4 cup cold water
1 envelope unsweetened gelatin powder (a bit over 2 teaspoons)
1/4 cup boiling water
2 cups heavy cream
1 tablespoon vanilla extract or more to taste (or other flavoring)
sugar substitute equal to 1/4 cup sugar (like liquid sucralose) or to taste
pinch salt

Sprinkle the gelatin powder on the cold water and let soften for several minutes. Then add the boiling water and stir until gelatin is totally dissolved.

Combine dissolved gelatin with the rest of the ingredients. Stir to mix completely, and taste. Adjust flavors to your liking.

Pour mixture into custard cups, ramekins, or glasses. Chill completely – it will take 3 to 4 hours until completely set.

NOTE - I use just 1 squirt of liquid sucralose (Apriva) & that's plenty sweet enough.
