I was going to suggest what Luke already suggested and also trying a mixture of ground sunflower seeds and sesame seeds. The taste and colour won't be the same - almonds are pretty neutral - but it should work.
Nuts and certain seeds aren't very absorbent. They supply bulk and texture to baked goods. So something that doesn't absorb liquid very well would work.
