I make a sort of flatbread using ground linseeds (flax in USA) in the microwave and have been having that with my scrambled eggs every Sunday brunch!
Flax Flatbread
1 egg (large in UK = medium in USA)
1 tablespoon melted coconut oil (butter or any oil/fat will do)
2 flat tablespoonsof ground linseed/flax seeds
1/2 flat teaspoon baking powder
Mix dry ingredients thoroughly then add wet ingredients and mix till smooth.
Pour onto a parchment circle (I sometimes just put it straight onto the microwave glass turntable) and microwave for about 90 seconds.
Remove and let cool on a cooling rack.
It won't fit in my toaster so I put it under the grill for a short time each side to toast it while cooking the eggs.
