I make my own "bark":
400g Lindt 90%
200g Virgin coconut oil
450g low omega 6 nuts (Almonds, Pistachios, Macademias, Cashews & Hazel)
I soak the nuts in hot water to soften, oven dry them and put them in silicone moulds with 18 separate square pockets (to avoid the pain of having to break it up after setting). I then melt the oil and choc in a glass bowl sat above a saucepan of simmering water and pour it over. Allow to cool and then put it in the fridge to set.
