I'd just give the diet a week following it exactly. Just keep your calories/protein/fat/carbs correct for your parameters. I think you'll do just fine. You might of been out of ketosis for other reasons and not the lettuce. I confess that I only have 1 salad and veggies for dinner. Tomorrow I'm going out for lunch so I'll have a salad.

I'm having a controlled free day for Thanksgiving. Others might be able to help you better on that one.
