I love cole slaw for a cookout. You can buy the packs already shredded and make up dressing that's mayo/vinegar (I use red wine or cider vinegars) and some splenda to taste. Recipes are easy to find, just substitute splenda and leave out anything else objectionable.
Lots of grilled veggies---zucchini sliced longways, onions, peppers.
Have fun. We're going to a cookout on Sunday and I don't know what they'll be serving besides the gigantic chocolate cake they asked me to bring!
