Forums such as this and the various low carb books/online info are really all you need to know. The rule of thumb with healthy eating is really avoid processed foods and only eat what you can hunt, gather, pick or pluck. The fat thing is controversial. You need fats for energy when low carbing and my rule is hard (at room temperature) fat is the best.
Sadly most trained dieticians are trained by the NHS and have to follow their rules professionally, altho I KNOW for a fact that there are a growing number who dont really believe in the low fat/low calorie mantra that they have to preach anymore.
