Nitrates and sugar are completely two different things.
Nitrate: don't worry too much about it. You'll find a fair bit of research in the research subforum that shows that nitrates aren't harmful at all. In fact some vegies contain more nitrates than your bacon.
Sugar: after searching Brisbane for sugar free bacon and never finding any, I decided not to worry about it. And the tiny amount in bacon is one thing that has never made any difference to my losses.

So my advice is to go ahead and eat your bacon and enjoy it.
