I've been busy experimenting and have found a perfect mayonnaise. The texture and taste according to my taste buds was near enough perfect. However, I haven't as yet been near a Miracle Whip jar.........so can't compare mine to this magical mystery mayo.

I used 1 whole organic egg plus an extra yolk.

2 tbls French mustard.

S&P to taste.

Approx 2 cups of oil. I used 1 1/2 sunflower and 1./2 carthame and canola/rapseed.

A few spoons of lemon juice;

Place eggs, yolk, mustard, s&p into a food processor. Gently add the oil. At first a few drops at a time then as the sauces starts to thicken in a drizzle. Adjust seasoning and add a few spoons of lemon juice.
