This is pretty good...I didn't have any peppers, but decided to make it anyway because the seasoning mix sounded yummy.

I used boneless chicken thighs because that's what I had on hand. It cooks down into very tender chicken pieces with a mexican-spiced sauce on them. Cheese and sour cream were a perfect finishing touch. I'm betting the leftovers will taste even better tomorrow. I highly recommend this one!
