Chicken Broccoli Bake
I am sure there are many versions of this, but here's my version of the casserole:
6 oz chicken (diced) 4 oz broccoli (raw) 1/2 c ground pork rinds 2t garlic (minced) 2t onion (minced) 1 cup shredded mozzarella 1T parmesan cheese 1/4c mayo 1/4 c sour cream 1/4 c hot water Prepare the broccoli, boil for about 5-8 min, until cooked. Save 1/4c of the hot water from broccoli for sauce. Combine water, mayo, sour cream in a small bowl. Combine parmesan and pork rinds. Sprinkle garlic and onion to taste. Layer the cassarole dish: 1/2 pork rind mixture, chicken, broccoli, sauce, cheese, 1/2 pork rind mixture. Bake 350 degrees for about 30 min until cheese looks done. Fitday totals: Serves 4 Per Serving Cals 260 Fat 17g Carbs 3 Protein 23 |
I was thinking about trying this with different sauces, using different dressings- french, italian, alfredo, etc fo different outcomes. I will let you know the results!

Wow Urbanzero, this sounds great & its low in carbs per serv. I am definately gonna try this one!
My question is, the only thing you end up layering is the pork rind mixture, right? Everything else, do you just put all of the chicken down, then all of the broccoli, then all of the sauce, Then all of the cheese & finish it off w/the rest of the PR mixture, am I right? Sorry, just wanna make sure it comes out as good as it sounds! :) |
Yep. I make it all the time, I change the ingredients everytime I make it. I added ricotta cheese instead of sour cream one time and it was really good. I made it for my mom (non-LCer) and she is beggin me for the recipe!! :)

i use a real easy method and make a thick cheese soup for the topping instead of sour cream or mayo...etc
Oh always add a 1/2 teaspoon of curry powder.......... even if it sounds bad add it.....what a difference. :thup: |
I consider myself a pretty good home cook and a foodie when I go out to eat. I can make a souffle or hollandaise with the best of them... but my mom never taught me how to cook... so while I've taught myself stews and soups, I still have no clue with most home cooking things like casseroles.
THIS WAS SO GOOD! hahah :D I feel silly that something so simple was so tasty.. but I'm looking forward to my leftovers for lunch in a half hour. I used ricotta since I didn't have any sour cream and I quickly browned the chicken with garlic slices before putting into the dish. I also buttered the dish, used 3x more parmesan, and turkey bacon instead of pork rinds. I'm sure I'll be making this once a week.. thanks! |
Hi guys, Okay I am trying this recipe as we speak. It is in the oven right now and I have about 25 minutes left until I can seek my little teeth into it. I thought about adding water chestnuts in because it sorta reminds me of a casserole my mom made for me when I was little. Need to find out the carb count first. Can't wait... What's the serving size on this dish? Is it 1/2 cup or 1 cup per serving?
